Unfortunately this is a silly
myth.
Caffeine, could cause trouble maybe, but sugar will not, even with children who are diabetics, etc. Worst possible case re: excess sugar might cause a sharp drop-off of bloodsugar meaning a "crash" with them having no energy rather than excess!

If they/I do not wish to teach what then? If they solely wish to study but not ever teach the art... still required? As a parent, regardless of the fact I teach for a living I can certainly keep little Timmy from touching his classmates, seperate him if he is ~uncontrolled~.
Are your assistants kids or grown-ups? Any of your assistants have training in behavior modification? Special Education?
You might want to role play some scenerios for grins and giggles.
