Being a Baguazhang instructor, our system uses a lot of palms as well as other surfaces of the arms, hands, and body to use in defending ourselves.

Tai Chi uses a lot of open palm, also wing chun has a lot of open palm work (and also a lot of fists, but I imagine you can just decide not to use them)
