I work security at a venue which receives lots of drunks and wannabe "tough guys." Our policy is to handle a conflict with the least amount of force necessary for liability reasons. Usually we separate the attackers and "help" them out of the resort for ejection. By help, we escort them and sometimes an unruly drunk will need guidance by holding or controlling his arms and adding a little pressure to show authority. I would like to know some good standing arm locks (ie. chicken wing) to control their arms for ejection while maybe adding a little pain to their day. A guide on how to do those moves will be gratefully appreciated. Thanks!

Look for a Jujutsu, Judo, Hapkido, Aikido or a good Ninjutsu school in your area. There are a number of ways you can restrain and escort someone even without locking their limbs, these are generally considered safer. e.g. half and full nelson, various half-chokes and headlocks, and other come-along techniques. If you do not have proper training, the chances of injuring the person you are using this on (and thus lawsuit) are high. The chances of them escaping are also high.

You should talk to the veterans at the resort, they'll be able to tell you what works for them. Martial artists that have no bouncing experience are not a good source of information.

You should also get clear direction from management as to what they will allow you to do, and you'll probably want to check with police as well. Remember if you slap a arm lock on someone and they try to rip out and injure themselves they may come after you legally, and that is not going to be something you want.
