Good thread! I use many variations to deal with jabs and crosses, depending on how late I notice them.  Hooks I generally avoid if I can. Uppercuts I try to roll (rock?) with them, since they are hard to see.

Catch:

I was taught slightly different but this is close enough (I don’t want to come across as a nit picker know it all). Any way I don’t use this technique, I’d rather use head movement to avoid the blows and keep both hands for counter punching.
Parry:

Just how I was taught, I don’t parry for the same reason I don’t catch.
Block:

This is what I try and do if I can’t get my head out of the way in time.
Shoulder:

Slip:

I use the slip for all straight punches (jabs, crosses, whatever) to the head. Also the slip is the foundation for my rhythm. I have a preference for short rhythm but I do mix it up a bit with long rhythm. Head movement, rhythm and footwork are the basis of my defense. That and keeping my hands up at all times!
Duck:

Yes or a “U” motion, I duck hooks and the infamous haymaker.
Rock:

Good move but it’s more suited for long rhythm so I don’t use it as much as the slip.
Well that’s my two cents. I probably do things different from most of you, not saying better just different.
