Alot of times you hear that carbs are good to eat for energy. They are but you don't want the carbs from white flour such as white bread, bagels etc. White flour converts into sugar which will slow you down. The best source of carbs in my opinion is whole wheat bread, which don't convert to sugar. When buying bread make sure it says 100% WHOLE wheat, not just wheat bread. Alot of companies call the bread wheat bread and people think there buying whole wheat bread when their really buying a fake/cop-out version.

All carbohydrates convert to sugar. This sugar doesn't "slow you down" - in fact glucose (a type of sugar) is the energy source for your body. What you are getting confused about is the "Glycemic Index" of foods (GI Index), which tells you how fast a certain carbohyrdrate converts to glucose. A carbohydrate with a high GI index converts to glocose faster then one with a low GI index.

Generally it's best to stick to foods with a low GI index, as it will keep our insulin (read sugar) levels stable. However say if you'd just run a marathon, then a food with a high GI index would be more beneficial to quickly raise your blood sugar levels.
